This recipe was shared with me from my husband’s grandmother. A couple years ago was my first time actually trying Zucchini bread at all, can you believe that?! Now I am in love with this and cannot believe I waited so long to try this bread!! Yum!
¾ cup vegetable oil
|1 1/4 cups sugar
3 eggs beaten
1 ¾ cups shredded zucchini (do not drain)
2 cups flour
1 ¼ teaspoons baking soda
2 ½ teaspoons baking powder
1 teaspoon salt
1 teaspoon cinnamon
Preheat oven to 325 degrees. Spray a 9×5 inch loaf pan with cooking spray…
Combine oil, sugar, eggs and zucchini in a large bowl. Beat together real well. Combine dry ingredients and gradually add to zucchini mixture. Beat for 3 minutes. Scrape batter into baking pan or several small pans. Bake 1 hour or until knife in center comes out clean. Enjoy!
